The spring has just arrived with its special colors, scents and flavors. As I was born in May, I am a huge fan of spring and I would like to share the special recipes of the season to celebrate this precious time of year.

Bahar (Spring) -Candan Erçetin



  • 250 gr long-grain rice 
  • 500 ml chicken broth
  • 15 green almonds
  • 3 table spoons of olive oil
  • 2 table spoons of butter
  • 1 clove of garlic
  • 1 onion (small)
  • 2 table spoons of pine nuts
  • 2 table spoons of blackcurrant
  • 1 coffee spoon of lemon juice
  • Zest of ½ lemon
  • 1 coffee spoon of vinegar
  • Dill
  • Fresh mint
  • Black pepper,ground cinnamon, salt

Chop the onions finely and chop the garlic until it is mashed. (puree) Cut the green almonds into half and remove the seed. Boil some water with abundant salt in a saucepan; add the amonds and scald them for 2-3 minutes; then take them out to a bowl full of iced water. Add the oliveoil, onions, pine nuts and garlic into a pan, cook them for 5 minute; then add the lemon juice, vinegar, blackcurrant and green almonds, cook them for another 4-5 minutes. Afterwards add the rice and cook with other ingredients for 2-3 minutes. Then, add  heated chicken broth and some salt. Cook it for 2-3 minutes on high heat; then simmer it for 15-20 minutes. Add the butter, chopped fresh mint, dill, lemon zest, cinnamon and black pepper when it is about to get cooked. Finally stir it well and leave it rest for 10 minutes. Serve it by garnishing with some dill and green almonds.

  • It is crucial to scald the green almonds and leave them into iced water so that they do not oxidize and keep their green color. 
  • Cook the rice without closing the tap on the pan.



  • 400 grams yoghurt 
  • 400 grams Greek yoghurt
  • 15 green almonds
  • 4 table spoons of crashed walnut
  • Fresh mint
  • Dill
  • 1 clove of garlic (puree)
  • Salt
  • Sliced bread for toasting ( Square shaped)

Put yoghurt and greek yoghurt into a cheese cloth, hang it  and wait for 1-2 hours so that it will drain its water content. 

Cut the green almonds into half and remove the seeds; then chop them finely. Add the chopped green almonds, chopped walnuts, garlic puree, chopped fresh mint, chopped dill and some salt into the yoghurt, stir it. Cut the slices of bread in 4 parts (square shaped), toast them in the oven. Spread the dipping sauce with yoghurt on the bread, serve it by garnishing with some dill.
