Ingredients (2 pax)

-8 loquats

-250 gr minced beef or lamb

-1 tomato

-1 green pepper

-1/2 red onion

-2 table spoon olive oil

-1 coffee spoon salt

-1 coffee spoon ground black pepper

Cut the loquats into half, take the seeds out.

Mix minced meat, salt and black pepper. Make flat meatballs with 3-4 cm diameter.

Place one meatball between two halves of each loquat. Place the stuffed loquats on a baking tray.(As my baking tray was small, only 7 loquats could fit)

Cut the stem of tomato, make incision as it is shown in photo (Do not slice)

Stuff the incision with the minced meat mixture.

Place the tomato in the middle of the baking tray.

Slice the onion and pepper as it is shown in photo. Place them in between loquats.

Sprinkle olive oil on all ingredients.

Cover the baking tray with aluminium foil.

Bake the Kebab in preheated oven (200 Celsius degrees in the oven with fan, 220 Celsius degrees in the oven without fan) for 30 minutes.

Take the aluminium foil out and bake for another 20 minutes.
