CHICKEN THIGHS WITH QUINCE

Let’s confess that you thought that I was planning to publish a sweet recipe with quince, didn’t you?

But, as some of you already know I like unexpected ones and less preferred paths 🙂 Thus I prefer a savory recipe with quince. You will never regret if you try this chicken recipe loaded with vitamins and flavor of quince.

Ingredients:

-2 quinces 

-6 chicken thighs (boneless)

-1 onion

-1/2 lemon

-1 clove of garlic

-3 ts olive oil

-4 ts Port wine 

-1 ts honey

-1 cup chicken broth (or hot water)

-1 cinnamon stick

-1 cs ground blackpepper

-8-10 peppercorns 

-1 cs thyme

-1 tcs turmeric

-2-3 bay leaves

-Salt 

Instructions:

– Peel and deseed the quinces, chop them into medium size chunks. Cook them in water with the juice of half lemon for 15 minutes. Drain the quinces, add the honey and mix then well.

– Add salt, 1/2 cs thyme and ground black pepper on chicken thighs, mix them well.

-Pour the olive oil into the pot, add turmeric, half cs thyme, cinnamon stick and peppercorns; sauté the spices while stirring for 2-3 minutes.  (To maximize the flavor of the spices) 

– Chop the onion finely (in the form of emincer) Add them into the pot, cook for 4-5 minutes.

-Add grated garlic and bay leaves, cook for 2 minutes.

-Add chicken thighs, cook for 10 minutes (5 minutes for each sides) Add Port wine and cook for 5 minutes.

-Add the chunks of quince and chicken broth; close the lid of the pot, cook for 15 minutes.

Serve it with rice.
